Binnenbos — Buitenkamer

Binnenbos — Buitenkamer is a table in which living plants grow, allowing guests to literally dine amidst nature. With this table, we bring an ecosystem indoors that becomes an integral part of the dining experience. All the dishes served consist of plants that grow on this table: chives, lovage, creeping thyme, purslane, sea fennel and red sorrel, as well as ground ivy, plantain and angelica. During the meal, we discuss seasonal and local food, foraging and wild harvesting, ecology, biodiversity and nature. The table becomes more than just a piece of furniture: it is a living biotope that influences the dining experience. 

Smell and taste are closely linked senses that together determine our entire gustatory experience. But by also incorporating touch and the flavour of the unprocessed produce into the meal, we aim to instil in our guests an awareness of the connection between humans and nature and to offer them an immersive experience. The palate is stimulated, becoming more complex and broader as a result.
